Flourless Vanilla Bean Greek Yogurt Cake (Print version)

A light, creamy flourless vanilla bean Greek yogurt cake with a custard-like crumb and real vanilla flavor.

# Ingredients:

For the pan

01 - 1 teaspoon butter or neutral oil, for greasing
02 - 1 tablespoon cornstarch, for dusting the pan

For the cake

03 - 2 cups (480 g) full-fat plain Greek yogurt, room temperature
04 - 4 large eggs, separated, room temperature
05 - 2/3 cup (135 g) granulated sugar
06 - 1/3 cup (40 g) cornstarch
07 - 1 vanilla bean, split and seeds scraped, or 2 teaspoons vanilla bean paste
08 - 1 teaspoon finely grated lemon zest
09 - 1/4 teaspoon fine salt
10 - 1 teaspoon fresh lemon juice

For serving

11 - 1 tablespoon powdered sugar, optional
12 - 1 cup (140 g) fresh berries, optional

# Instructions:

01 - Heat the oven to 325°F. Grease an 8-inch springform pan, line the bottom with parchment, dust lightly with cornstarch, and wrap the outside of the pan with foil.
02 - In a large bowl, whisk the egg yolks and sugar for 1-2 minutes until lighter in color. Whisk in the Greek yogurt, cornstarch, vanilla bean seeds, lemon zest, and salt until smooth.
03 - In a clean bowl, beat the egg whites with lemon juice until soft, glossy peaks form. The whites should hold their shape but still look moist.
04 - Stir one large spoonful of egg whites into the yogurt mixture to loosen it. Gently fold in the remaining whites in two additions, stopping when no large streaks remain.
05 - Pour the batter into the prepared pan. Set the pan in a roasting pan and add hot water halfway up the sides. Bake for 50-55 minutes, until puffed, lightly golden, and softly jiggly in the center.
06 - Turn off the oven, crack the door, and leave the cake inside for 20 minutes. Remove from the water bath and cool to room temperature.
07 - Refrigerate the cake for at least 2 hours before unmolding. Dust with powdered sugar and serve with berries if desired.

# Good to know:

01 - Use thick full-fat Greek yogurt for the creamiest texture.
02 - The cake will rise in the oven and settle as it cools.
03 - Chill before slicing for the cleanest texture.
