01 -
Place the whole oranges in a saucepan and cover with water. Simmer gently for 45-60 minutes, until very soft when pierced. Drain and cool until easy to handle.
02 -
Cut the oranges open, remove any seeds, and puree the peel and flesh in a food processor until smooth. Measure about 1 cup of puree.
03 -
Heat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
04 -
Pulse the pistachios with 2 tablespoons of the sugar until finely ground. Stop before the nuts turn into paste.
05 -
Beat the eggs and remaining sugar for 2-3 minutes, until slightly pale. Stir in the orange puree and vanilla, then fold in the ground pistachios, almond flour, baking powder, cardamom, and salt.
06 -
Spread the batter in the prepared pan. Bake for 45-55 minutes, until the top is golden, the center is set, and a tester comes out with moist crumbs.
07 -
Cool in the pan for 20 minutes, then release the ring and cool completely. Brush with warm marmalade, scatter with chopped pistachios, and dust lightly with powdered sugar if desired.
