Fig Honey Pistachio Tart (Print Version)

# Ingredients:

01 - Pistachio flour (100 grams).
02 - Almond flour (68 grams).
03 - Pastry flour (75 grams).
04 - Whole grain spelt flour (20 grams).
05 - Kosher salt (pinch).
06 - Baking powder (1 teaspoon).
07 - Unsalted butter (70 grams).
08 - Flower or field honey (150 grams).
09 - Fresh lemon zest (from 1 lemon).
10 - Pure vanilla extract (1 teaspoon).
11 - Large eggs (2, separated).
12 - Fresh figs (8, quartered).
13 - Extra butter for greasing tins.
14 - Powdered sugar or honey for finishing.

# Instructions:

01 - Preheat oven to 160°C (320°F).
02 - Quarter figs and grease tart tins with butter.
03 - Combine all flours, salt and baking powder in bowl.
04 - Beat honey and butter until creamy, add zest, vanilla and egg yolks.
05 - Mix wet and dry ingredients until no dry flour remains.
06 - Whip egg whites to very soft peaks.
07 - Gently fold whites into batter until fully combined.
08 - Divide batter between tart tins and level surface.
09 - Place fig quarters on top, stems toward center.
10 - Cook for 25 minutes until golden.

# Notes:

01 - Can make nut flours in food processor.
02 - Spelt flour adds moisture and sweetness.
03 - Egg whites should form very soft peaks.
