Fiesta Lime Chicken Avocado Salsa (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts or thighs
02 - 2 tablespoons olive oil
03 - 1 tablespoon freshly squeezed lime juice
04 - 1 tablespoon grated lime zest
05 - 1 teaspoon chili powder
06 - 0.5 teaspoon smoked paprika
07 - 0.5 teaspoon ground cumin
08 - 0.25 teaspoon garlic powder
09 - 0.25 teaspoon onion powder
10 - Salt, to taste
11 - Freshly ground black pepper, to taste

→ Avocado Salsa

12 - 2 ripe avocados, diced
13 - 250 grams cherry tomatoes, halved
14 - 0.5 red onion, finely chopped
15 - 0.5 jalapeño pepper, seeded and finely chopped (optional)
16 - 0.25 cup fresh cilantro, chopped
17 - 2 tablespoons freshly squeezed lime juice
18 - 1 tablespoon olive oil
19 - Salt, to taste
20 - Black pepper, to taste

# Instructions:

01 - In a large bowl, whisk together olive oil, lime juice, lime zest, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Add chicken and coat thoroughly. Cover and refrigerate for 30 minutes to 4 hours.
02 - Preheat oven to 200°C. Lightly oil a baking dish. Transfer marinated chicken to the dish, discarding excess marinade. Bake for 20–25 minutes, or until the internal temperature reaches 74°C.
03 - In a mixing bowl, combine diced avocado, cherry tomatoes, red onion, jalapeño, and cilantro. In a separate bowl, whisk together lime juice, olive oil, salt, and black pepper. Drizzle dressing over salsa ingredients and toss gently to combine.
04 - Allow roasted chicken to rest for several minutes. Slice and arrange on serving plates. Top generously with avocado salsa and serve immediately.
