Cut the ends of the eggplant. Slice it vertically into strips with a thickness of 1 cm.

Coat the eggplant slices with olive oil. Roast on medium heat in a preheated pan for a few minutes on both sides until lightly golden, or cook in an air fryer at 190°C for 5-6 minutes.

In a small bowl, combine shredded cheddar cheese, shredded mozzarella cheese, oregano, chopped onions, chopped bell peppers, chopped plum tomatoes, and sweetcorn.

Place the roasted eggplant slices in a single layer in an air fryer basket. Spread tomato paste onto each eggplant slice, then sprinkle with the prepared cheesy vegetable topping. Add a sprinkle of oregano.

Air fry the eggplant pizzas in a preheated air fryer at 160°C for 6-7 minutes. Garnish with fresh basil, serve immediately, and enjoy.
