Air Fryer Eggplant Pizza (Print Version)

# Ingredients:

→ Base

01 - 1 eggplant
02 - ½ tablespoon extra virgin olive oil

→ Toppings

03 - 2 tablespoons tomato paste
04 - 4 tablespoons shredded cheddar cheese
05 - 2 tablespoons shredded mozzarella cheese
06 - ¼ teaspoon oregano
07 - 1 tablespoon chopped red onion
08 - 3 tablespoons chopped bell peppers (red, green, or yellow)
09 - 1 tablespoon chopped plum tomatoes
10 - 1 tablespoon sweetcorn

# Instructions:

01 - Cut the ends of the eggplant. Slice it vertically into strips with a thickness of 1 cm.
02 - Coat the eggplant slices with olive oil. Roast on medium heat in a preheated pan for a few minutes on both sides until lightly golden, or cook in an air fryer at 190°C for 5-6 minutes.
03 - In a small bowl, combine shredded cheddar cheese, shredded mozzarella cheese, oregano, chopped onions, chopped bell peppers, chopped plum tomatoes, and sweetcorn.
04 - Place the roasted eggplant slices in a single layer in an air fryer basket. Spread tomato paste onto each eggplant slice, then sprinkle with the prepared cheesy vegetable topping. Add a sprinkle of oregano.
05 - Air fry the eggplant pizzas in a preheated air fryer at 160°C for 6-7 minutes. Garnish with fresh basil, serve immediately, and enjoy.
