Taco Casserole (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 pound lean ground beef
03 - 1/2 medium onion, chopped

→ Seasonings

04 - 1 tablespoon chili powder
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon ground cumin

→ Casserole Ingredients

07 - 2 cups crushed Doritos (Nacho Cheese flavor)
08 - 1 (14 oz) can black beans, drained & rinsed
09 - 1 (12 oz) can corn, drained
10 - 1 (15.5 oz) jar salsa
11 - 2 cups shredded Mexican cheese blend or cheddar, divided

→ Optional Toppings

12 - Tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce

# Instructions:

01 - Preheat oven to 350°F and place rack in middle position.
02 - Cook ground beef with oil in skillet over medium-high heat for 5 minutes, breaking up meat. Add onion and seasonings, cook 5 more minutes.
03 - Spread crushed Doritos in even layer in 9x13 casserole dish.
04 - Drain excess fat from beef. Stir in beans, corn, salsa, and half the cheese until cheese melts. Spread mixture over Doritos.
05 - Top with remaining cheese and bake uncovered for 15-20 minutes until warm and cheese is melted. Serve with optional toppings.
