So Easy Delicious Shrimp Fried Rice (Print Version)

Savory shrimp, peas, carrots, and rice cooked in aromatic soy and sesame for a fast, crowd-pleasing meal.

01 - 3 cups cooked white rice (preferably day old), loosened
02 - 2 tablespoons neutral-flavoured oil
03 - 1 1/2 cups frozen peas and carrots, thawed
04 - 1 medium onion, finely diced
05 - 1 tablespoon garlic, minced
06 - 1 cup frozen shrimp, peeled and deveined
07 - 3 tablespoons low-sodium soy sauce
08 - 1 teaspoon sesame oil

# Instructions:

01 - Heat 1 tablespoon oil in a large pan over medium-high heat. Add shrimp and cook until opaque and just cooked through, about 2–3 minutes. Remove shrimp and set aside.
02 - In the same pan, add remaining oil. Add diced onion and sauté until translucent and tender, approximately 2 minutes.
03 - Add minced garlic to the onion and cook for 30 seconds, stirring constantly until fragrant.
04 - Add the day-old rice, peas, and carrots to the pan. Mix thoroughly to break up any clumps and heat the vegetables, cooking for 2–3 minutes.
05 - Drizzle soy sauce and sesame oil over the mixture. Return cooked shrimp to the pan. Toss and stir all components until evenly coated and heated through, about 2 minutes.
06 - Taste for seasoning. Serve hot immediately after mixing.

01 - Using cold, day-old rice yields the best texture for fried rice and prevents clumping.
