Marry Me Chicken Thighs (Print Version)

Juicy chicken thighs with a creamy sun-dried tomato and Parmesan sauce, best served with your favorite side.

# Ingredients:

→ Main

01 - 900 grams bone-in, skin-on chicken thighs
02 - 2 tablespoons extra virgin olive oil
03 - Salt, to taste
04 - Black pepper, to taste
05 - Onion powder, to taste
06 - Garlic powder, to taste

→ Aromatics & Herbs

07 - 60 grams onion, finely chopped
08 - 5 cloves garlic, minced
09 - 1 teaspoon fresh thyme leaves
10 - 1 teaspoon dried oregano
11 - 0.5 teaspoon crushed red pepper flakes
12 - 0.5 teaspoon dried basil

→ Sauce

13 - 60 millilitres dry white wine
14 - 180 millilitres chicken stock
15 - 120 millilitres heavy cream
16 - 60 grams sun-dried tomatoes, finely minced
17 - 60 grams Parmesan cheese, freshly grated

→ To Finish

18 - Fresh parsley, chopped, to garnish

# Instructions:

01 - Set oven temperature to 190°C.
02 - Pat chicken thighs dry and season on both sides with salt, black pepper, onion powder, and garlic powder.
03 - Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs, skin-side down first, for approximately 4 minutes per side until golden brown. Remove chicken from the pan and set aside.
04 - Remove all but 2 tablespoons of rendered oil from the skillet. Reduce heat to medium and add chopped onion, thyme, oregano, red pepper flakes, and basil. Cook for 3 minutes, stirring occasionally.
05 - Stir in minced garlic and cook for 1 minute until aromatic.
06 - Pour in white wine and allow to reduce slightly, scraping any browned bits from the pan. Add chicken stock, heavy cream, sun-dried tomatoes, and Parmesan cheese. Stir to combine and bring to a simmer.
07 - Nestle seared chicken thighs into the sauce, skin side up. Transfer skillet to preheated oven and bake for 20 to 25 minutes, or until the chicken is fully cooked and a meat thermometer inserted into the thickest part reads at least 74°C.
08 - Remove skillet from the oven. Rest chicken for several minutes, garnish with chopped parsley, and serve hot accompanied by your preferred side.

01 - For best results, allow the sauce to reduce until thickened before serving; ideal served with mashed potatoes, rice, noodles, or mashed cauliflower.
