10 Min Easy Egg Fried Rice (Print Version)

# Ingredients:

01 - 2 cups cold day-old cooked jasmine rice
02 - 4 large eggs, beaten
03 - 1 green onion, finely chopped
04 - 2.5 tablespoons regular soy sauce (not dark soy sauce)
05 - ½ tablespoon sesame oil
06 - 2 tablespoons vegetable oil or any neutral oil

# Instructions:

01 - Heat vegetable oil in a large pan or wok. If using a wok, let the oil smoke; if using a regular pan, skip this step.
02 - Add beaten eggs to the pan and stir-fry quickly until they begin to take shape but remain moist.
03 - Add rice, breaking up any clumps as you stir it into the eggs.
04 - Push everything to one side, add remaining oil and green onions in the empty space. Mix into rice and eggs.
05 - Pour soy sauce and sesame oil along the edges of the pan. Toss until rice is evenly brown. Serve immediately while hot.

# Notes:

01 - Day-old cold rice works best for fried rice as it's less sticky
