Heat vegetable oil in a large pan or wok. If using a wok, let the oil smoke; if using a regular pan, skip this step.

Add beaten eggs to the pan and stir-fry quickly until they begin to take shape but remain moist.

Add rice, breaking up any clumps as you stir it into the eggs.

Push everything to one side, add remaining oil and green onions in the empty space. Mix into rice and eggs.

Pour soy sauce and sesame oil along the edges of the pan. Toss until rice is evenly brown. Serve immediately while hot.
