Easy Cheesy Potato & Kielbasa Recipe (Print version)

Tender potatoes, smoky kielbasa, peppers, and a creamy cheddar sauce baked until bubbly and golden.

# Ingredients:

For the potatoes and kielbasa

01 - 2 lb (900 g) Yukon gold potatoes, cut into 1/2-inch cubes
02 - 1 tablespoon kosher salt, for the boiling water
03 - 14 oz (400 g) smoked kielbasa, sliced into 1/4-inch rounds
04 - 1 tablespoon olive oil
05 - 1 small yellow onion, diced
06 - 1 red bell pepper, diced
07 - 2 cloves garlic, minced
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon black pepper

For the cheese sauce

10 - 1 cup (240 ml) whole milk
11 - 1 tablespoon cornstarch
12 - 1/2 cup (120 g) sour cream
13 - 2 cups (225 g) shredded sharp cheddar cheese, divided
14 - 1/2 cup (55 g) shredded mozzarella cheese
15 - 2 tablespoons sliced green onions, for serving

# Instructions:

01 - Heat the oven to 375°F. Put the potato cubes in a pot, cover with cold water, add the salt, and simmer for 6-8 minutes until barely tender. Drain well.
02 - Heat the olive oil in a large oven-safe skillet over medium heat. Add the kielbasa and cook for 3-4 minutes until browned at the edges. Transfer to a plate.
03 - Add the onion and bell pepper to the same skillet. Cook for 4-5 minutes until softened, then stir in the garlic, smoked paprika, and black pepper for 30 seconds.
04 - Whisk the milk and cornstarch until smooth. Pour into the skillet and cook for 1-2 minutes until lightly thickened. Turn off the heat and stir in the sour cream, 1 1/2 cups cheddar, and mozzarella.
05 - Fold the drained potatoes and browned kielbasa into the cheese sauce. If your skillet is not oven-safe, transfer everything to a greased 9x13-inch baking dish.
06 - Sprinkle the remaining 1/2 cup cheddar over the top. Bake for 20-25 minutes until bubbling and hot in the center. Rest for 5 minutes, then top with green onions.
