Soft, thick cake batter pancakes with rainbow sprinkles and a quick vanilla glaze for a birthday-style breakfast.

# Ingredients:

For the pancakes

01 - 1 cup (125 g) all-purpose flour
02 - 1 cup (130 g) yellow cake mix
03 - 2 teaspoons baking powder
04 - 1/2 teaspoon fine salt
05 - 2 large eggs, separated
06 - 1 1/4 cups (300 ml) buttermilk, plus more if needed
07 - 3 tablespoons unsalted butter, melted and slightly cooled
08 - 2 teaspoons vanilla extract
09 - 1/8 teaspoon almond extract, optional
10 - 1/4 cup (45 g) rainbow sprinkles, plus more for serving
11 - Butter or neutral oil, for the griddle

For the vanilla glaze

12 - 1 cup (120 g) powdered sugar
13 - 2 tablespoons milk, plus more as needed
14 - 1/2 teaspoon vanilla extract
15 - Pinch of salt

# Instructions:

01 - Heat a nonstick griddle or skillet over medium heat, or set an electric griddle to 350 F. Lightly grease with butter or neutral oil.
02 - In a large bowl, whisk the flour, yellow cake mix, baking powder, and salt until evenly combined.
03 - In a medium bowl, whisk the egg yolks, buttermilk, melted butter, vanilla extract, and almond extract until smooth.
04 - Beat the egg whites in a clean bowl until soft peaks form. They should hold a loose shape but still look glossy.
05 - Stir the wet ingredients into the dry ingredients just until moistened. Fold in the whipped egg whites, then gently fold in the sprinkles. Rest the batter for 5 minutes.
06 - Scoop 1/4 cup batter for each pancake onto the hot griddle. Cook for 2-3 minutes, until bubbles appear and the edges look set. Flip and cook 1-2 minutes more, until golden and cooked through.
07 - Whisk powdered sugar, milk, vanilla, and salt until smooth and pourable. Add more milk 1 teaspoon at a time if needed.
08 - Drizzle warm pancakes with vanilla glaze and finish with extra sprinkles. Serve right away.

# Good to know:

01 - Makes about 12 medium pancakes.
02 - Best served warm, right after glazing.
03 - Use rainbow jimmies for the cleanest color.
