Easter Bunny Coconut Tails (Print Version)

# Ingredients:

→ Coconut Base

01 - 5 cups unsweetened coconut (medium shred)
02 - 14 oz sweetened condensed milk
03 - 2 tbsp butter, melted & cooled
04 - 1 tsp vanilla extract
05 - ¼ cup confectioner's sugar

→ Colorful Coating

06 - 2 cups unsweetened coconut (fine shred)
07 - Liquid food coloring (various pastel colors)

# Instructions:

01 - In a large bowl, whisk condensed milk, melted butter and vanilla extract together.
02 - Stir in the medium-shred coconut and confectioner's sugar until well combined. Chill for 15 minutes.
03 - Meanwhile, color the fine-shred coconut: Mix ½ cup with 3-4 drops of food coloring and blend until evenly colored. Repeat for each desired color.
04 - Scoop chilled mixture into 1½ teaspoon portions and roll into balls, then coat in colored coconut.
05 - Place on a baking sheet and chill for 1 hour to set completely.
06 - Keep refrigerated until serving. Enjoy these sweet little bites!
