Dragon Drink (Print version)

A creamy mango dragonfruit drink with coconut milk, ice, and freeze-dried dragonfruit pieces.

# Ingredients:

For the fruit base

01 - 1 cup (240 ml) mango juice or mango nectar, chilled
02 - 1/2 cup (120 ml) white grape juice, chilled
03 - 1/2 cup (120 ml) cold water
04 - 1 to 1 1/2 teaspoons red dragonfruit powder
05 - 1 teaspoon green coffee extract or 1/4 cup (60 ml) cold green tea, optional

For finishing

06 - 1 cup (240 ml) unsweetened coconut milk beverage, chilled
07 - 2 cups ice, divided
08 - 2 tablespoons freeze-dried dragonfruit pieces
09 - Lime juice or simple syrup, optional, to taste

# Instructions:

01 - In a measuring cup, whisk together the mango juice, white grape juice, cold water, dragonfruit powder, and optional green coffee extract or green tea until the powder mostly dissolves.
02 - Stir in the chilled coconut milk beverage. Taste the mixture and add a little lime juice for brightness or simple syrup if your juices are not sweet enough.
03 - Fill a cocktail shaker or large lidded jar halfway with ice. Pour in the drink mixture and shake hard for 15-20 seconds until very cold and lightly frothy.
04 - Divide fresh ice and freeze-dried dragonfruit pieces between 2 tall glasses.
05 - Pour the shaken Dragon Drink over the ice and dragonfruit pieces. Serve right away while cold and creamy.

# Good to know:

01 - Best served immediately after shaking.
02 - Use carton coconut milk beverage, not thick canned coconut milk, for the closest texture.
03 - Leave out the green coffee extract or green tea for a caffeine-free drink.
