Dipping Meatball Sub with Extra Marinara (Print version)

Juicy meatball subs with melted cheese, toasted rolls, and extra warm marinara served on the side for dipping.

# Ingredients:

For the meatballs

01 - 1/2 lb (225 g) ground beef
02 - 1/2 lb (225 g) ground pork
03 - 1/2 cup (45 g) plain breadcrumbs
04 - 1 large egg
05 - 1/3 cup (30 g) grated parmesan cheese
06 - 2 cloves garlic, minced
07 - 2 tablespoons chopped fresh parsley
08 - 1 teaspoon Italian seasoning
09 - 3/4 teaspoon kosher salt
10 - 1/2 teaspoon black pepper
11 - 1 tablespoon olive oil, for browning

For the subs

12 - 3 cups (720 ml) marinara sauce, divided
13 - 4 sturdy hoagie rolls, split
14 - 1 tablespoon olive oil, for brushing rolls
15 - 4 slices provolone cheese
16 - 1 cup (115 g) shredded low-moisture mozzarella
17 - 2 tablespoons grated parmesan cheese, for finishing
18 - Fresh basil or parsley, for garnish

# Instructions:

01 - In a bowl, combine the beef, pork, breadcrumbs, egg, parmesan, garlic, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined, then shape into 16 meatballs.
02 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the meatballs in batches for 5-6 minutes, turning to color several sides.
03 - Add 2 cups marinara to the skillet, lower the heat, cover, and simmer for 10-12 minutes until the meatballs are cooked through. Keep the remaining 1 cup marinara warm for dipping.
04 - Heat the oven to 400 F. Brush the cut sides of the hoagie rolls with olive oil and toast on a sheet pan for 4-5 minutes until lightly crisp.
05 - Lay provolone on the toasted rolls and sprinkle with mozzarella. Bake for 3-4 minutes until the cheese starts to melt.
06 - Add 4 meatballs to each roll with just a spoonful of sauce from the pan. Sprinkle with parmesan and bake or broil briefly until bubbling.
07 - Garnish with basil or parsley. Serve hot with the reserved warm marinara in small bowls for dipping.

01 - Serve immediately while the rolls are crisp and the cheese is melted.
02 - Use frozen cooked meatballs to shorten the recipe to about 25 minutes.
03 - Keep extra marinara on the side instead of pouring it over the subs.
