Deep-Fried Shrimp Alfredo Burrito (Print Version)

Crunchy tortillas with creamy Alfredo, hot shrimp, and loads of melted cheese—absolutely shareable golden bites.

# Ingredients:

→ Filling

01 - 1 cup Alfredo sauce
02 - Salt and freshly ground black pepper, as much as you like
03 - 1 pound uncooked shrimp, take shells and veins off

→ Assembly

04 - 1 cup mozzarella, shredded
05 - 4 large flour tortillas

→ Coating and Frying

06 - Vegetable oil for frying
07 - 1/2 cup plain breadcrumbs
08 - 2 big eggs, beaten

# Instructions:

01 - Dump the Alfredo sauce, shrimp, pepper, and a sprinkle of salt in a big bowl. Let those ingredients hang out together for a few minutes.
02 - Grab a tortilla and spread out on your work surface. Add some of your shrimp mix right in the middle.
03 - Top the shrimp filling with mozzarella all over so every bite gets some cheese.
04 - Pull the sides of the tortilla in, then roll it up good and tight so nothing falls out.
05 - First roll each tortilla bundle in the beaten eggs, then cover with breadcrumbs until coated everywhere.
06 - Fill your deep pan with about 2 inches of oil. Put it over medium heat and let it warm up.
07 - When the oil is up to 350°F, gently drop in your burrito bites. Let them fry for about 3–4 minutes, flipping now and then so they get golden all over.
08 - Take your crispy burrito bites out and set them on paper towels so extra oil comes off. Eat them warm, and dunk in Alfredo sauce if you want.

# Notes:

01 - Don't crowd your pan when frying, or they'll get soggy. Cook a few at a time for best crunch.
