Copycat Crumbl Salted Caramel Cheesecake Cookies (Print Version)

# Ingredients:

01 - Unsalted butter, softened (3/4 cup).
02 - Granulated sugar (1/3 cup).
03 - Brown sugar (1/3 cup).
04 - Large eggs (2).
05 - Vanilla extract (2 teaspoons).
06 - All-purpose flour (1 1/2 cups).
07 - Graham crackers, crushed (2 cups divided).
08 - Salt (1/2 teaspoon).
09 - Baking soda (1/4 teaspoon).
10 - Baking powder (1/2 teaspoon).
11 - Cream cheese, softened (8 oz).
12 - Butter for frosting (8 oz).
13 - Powdered sugar (2 1/2 cups).
14 - Brown sugar for caramel (1 1/4 cups).
15 - Heavy whipping cream (1/2 cup).
16 - Butter for caramel (5 tablespoons).
17 - Vanilla for caramel (1 tablespoon).

# Instructions:

01 - Heat oven to 350°F. Line cookie sheets with parchment paper.
02 - Cream butters and sugars, add eggs and vanilla, then mix in dry ingredients and graham crackers.
03 - Scoop 2-inch balls, roll in extra graham crumbs, flatten to 3/4 inch thick.
04 - Cook one sheet at a time for 8-10 minutes until edges are golden.
05 - Beat cream cheese, butter and vanilla until smooth. Add powdered sugar until fluffy.
06 - Cook sugars, cream and butter until thickened. Add vanilla and salt.
07 - Pipe frosting on cooled cookies, drizzle with cooled caramel.

01 - Can be served chilled or room temperature.
02 - Let caramel cool before drizzling.
