Tortellini Soup (Print Version)

# Ingredients:

01 - ¾ pound Italian sausage, mild or spicy.
02 - ½ onion, finely diced.
03 - 2 tablespoons tomato paste.
04 - 1½ teaspoons Italian seasoning.
05 - 3 cloves garlic, minced.
06 - ¾ teaspoon salt.
07 - 4 cups low-sodium chicken broth.
08 - 2 large carrots, peeled and chopped.
09 - 2 celery ribs, sliced.
10 - 3 cups cheese tortellini, fresh or frozen.
11 - 2 cups fresh spinach or kale, chopped.
12 - 1 cup cream.
13 - ¼ cup Parmesan cheese, finely grated.

# Instructions:

01 - Cook sausage and onion in skillet over medium-high heat until browned. Drain excess fat if desired.
02 - Stir in tomato paste, Italian seasoning, garlic and salt. Cook 2 minutes more.
03 - Transfer meat mixture to slow cooker. Add broth, carrots, and celery.
04 - Cover and cook on low 5-6 hours or high 2-3 hours until vegetables are tender.
05 - Stir in tortellini, spinach, cream and Parmesan. Cook 10-15 minutes until pasta is tender.
06 - Taste and adjust seasonings before serving.

# Notes:

01 - Can substitute sausage with chicken or white beans.
02 - Any type of cream works in this recipe.
