Crockpot Steak Bites with Au Jus Gravy (Print version)

Tender slow cooker steak bites cooked in savory au jus gravy with onion, garlic, and buttery pan juices.

# Ingredients:

For the steak bites

01 - 2 lb (900 g) beef chuck roast, trimmed and cut into 1 1/2-inch bites
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon black pepper
04 - 1 medium yellow onion, thinly sliced
05 - 3 cloves garlic, minced

For the au jus gravy

06 - 1 packet (about 1 oz) au jus gravy mix
07 - 1 packet (about 0.87 oz) brown gravy mix
08 - 1 packet (about 1 oz) dry onion soup mix
09 - 1 cup (240 ml) low-sodium beef broth
10 - 1 tablespoon Worcestershire sauce
11 - 3 tablespoons (42 g) unsalted butter, cut into pieces
12 - 1 tablespoon cornstarch mixed with 2 tablespoons cold water, optional
13 - 1 tablespoon chopped parsley, optional for serving

# Instructions:

01 - Pat the beef dry and season with black pepper. Heat olive oil in a large skillet over medium-high heat and sear the beef in batches for 1-2 minutes per side, just until browned.
02 - Add the sliced onion and garlic to the bottom of a 5- to 6-quart slow cooker. Place the browned steak bites on top.
03 - Whisk the au jus mix, brown gravy mix, onion soup mix, beef broth, and Worcestershire sauce in a bowl. Pour the mixture evenly over the beef.
04 - Dot the butter over the top. Cover and cook on low for 4-5 hours or on high for 2.5-3 hours, until the beef is tender but still holds its shape.
05 - For thicker gravy, stir in the cornstarch slurry during the last 10-15 minutes. Cook on high with the lid slightly ajar until glossy and spoonable.
06 - Taste the gravy before adding any salt. Sprinkle with parsley if using and serve hot over mashed potatoes, rice, or noodles.
