Crockpot Garlic Parmesan Chicken Pasta (Print version)

# Ingredients:

For the chicken and sauce

01 - 2 lb (900 g) boneless skinless chicken breasts
02 - 1 teaspoon kosher salt, plus more to taste
03 - 1/2 teaspoon black pepper
04 - 2 teaspoons Italian seasoning
05 - 1 tablespoon unsalted butter, for greasing the slow cooker
06 - 1 bottle (12 oz or 340 g) garlic parmesan wing sauce
07 - 8 oz (225 g) cream cheese, softened and cubed
08 - 1/2 cup (120 ml) low-sodium chicken broth
09 - 3/4 cup (75 g) freshly grated parmesan cheese

For finishing

10 - 1 lb (450 g) short pasta, such as penne, rotini, bowties, or rigatoni
11 - 1/4 cup (10 g) chopped fresh parsley
12 - 1/4 teaspoon red pepper flakes, optional
13 - Extra grated parmesan, for serving
14 - Reserved pasta water, milk, or broth, as needed to loosen

# Instructions:

01 - Rub the inside of a 6-quart slow cooker with butter. Add the chicken breasts and season with salt, pepper, and Italian seasoning.
02 - Pour the garlic parmesan sauce over the chicken. Add the cream cheese cubes, chicken broth, and parmesan cheese over the top.
03 - Cover and cook on low for 3-4 hours or high for 2-3 hours, until the thickest part of the chicken reaches 165°F and shreds easily.
04 - Transfer the chicken to a cutting board and shred it with two forks. Stir the sauce in the slow cooker until smooth, then return the shredded chicken and mix well.
05 - Boil the pasta in salted water until al dente according to the package directions. Reserve 1 cup of pasta water, then drain.
06 - Fold the drained pasta into the slow cooker. Let it sit on warm for 5-10 minutes, adding splashes of pasta water, milk, or broth if needed. Finish with parsley, red pepper flakes, and extra parmesan.
