Easy Crockpot Chicken and Stuffing (Print version)

Tender slow cooker chicken with savory stuffing, creamy sauce, and green beans for an easy family dinner.

# Ingredients:

For the chicken

01 - 2 lb (900 g) boneless skinless chicken breasts, 4 medium pieces
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 1 teaspoon poultry seasoning

For the sauce and stuffing

07 - 1 (10.5 oz / 298 g) can condensed cream of chicken soup
08 - 3/4 cup (180 g) sour cream
09 - 3/4 cup (180 ml) low-sodium chicken broth, divided
10 - 1 (6 oz / 170 g) box herb seasoned stuffing mix
11 - 3 tablespoons (42 g) unsalted butter, melted

For the vegetables

12 - 12 oz (340 g) frozen green beans or mixed vegetables
13 - 2 tablespoons chopped fresh parsley, optional

# Instructions:

01 - Coat a 6-quart slow cooker with nonstick spray. Place the chicken breasts in a single layer and season with salt, pepper, garlic powder, onion powder, and poultry seasoning.
02 - In a bowl, whisk together the cream of chicken soup, sour cream, and 1/4 cup of the chicken broth until smooth. Spoon the sauce evenly over the chicken.
03 - Scatter the frozen green beans around the chicken and over any open spaces. Keep the layer fairly even so the stuffing can sit on top.
04 - In a separate bowl, toss the dry stuffing mix with the remaining 1/2 cup chicken broth and melted butter. Spoon it loosely over the sauce without pressing it down.
05 - Cover and cook on low for 4 1/2-5 1/2 hours or on high for 2 1/2-3 1/2 hours, until the chicken reaches 165°F in the thickest part.
06 - Let the dish rest uncovered for 5 minutes. Fluff the stuffing gently with a fork, sprinkle with parsley if using, and serve the chicken with stuffing and sauce.

# Good to know:

01 - Best made in a 6-quart slow cooker so the chicken sits in one layer.
02 - Cook time can vary by slow cooker model and chicken thickness.
03 - For softer stuffing, add 2-3 extra tablespoons of broth near the end.
