Season chicken thighs with salt and pepper. Place in crockpot.

Combine bourbon, brown sugar, soy sauce and garlic. Pour over chicken.

Cover and cook on low 4 hours or high 3 hours.

Mix cornstarch and water, add to sauce 30 minutes before done.

Serve over rice with green onion garnish.
