Crispy Cheesy Chicken Parmesan Heroes (Print version)

Golden chicken cutlets, warm marinara, and melted mozzarella tucked into toasted hero rolls for a crisp, cheesy sandwich dinner.

# Ingredients:

For the chicken

01 - 2 large boneless skinless chicken breasts, about 1 1/2 lb (680 g), sliced into 4 thin cutlets
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1/2 cup (65 g) all-purpose flour
05 - 2 large eggs
06 - 1 cup (60 g) panko breadcrumbs
07 - 1/2 cup (55 g) Italian seasoned breadcrumbs
08 - 1/2 cup (50 g) finely grated parmesan cheese
09 - 1 teaspoon garlic powder
10 - 1/2 teaspoon dried oregano
11 - 1/2 cup (120 ml) neutral oil, for shallow frying

For the heroes

12 - 4 Italian hero rolls or hoagie rolls, split
13 - 2 tablespoons (28 g) unsalted butter, melted
14 - 1 garlic clove, finely grated
15 - 1 1/2 cups (360 ml) marinara sauce, warmed
16 - 6 oz (170 g) low-moisture mozzarella, sliced or shredded
17 - 4 slices provolone cheese
18 - 2 tablespoons chopped fresh basil or parsley

# Instructions:

01 - Pat the chicken dry. Pound the cutlets to about 1/2 inch thick, then season both sides with salt and pepper.
02 - Place flour in one shallow dish. Beat the eggs in a second dish. Mix panko, Italian breadcrumbs, parmesan, garlic powder, and oregano in a third dish.
03 - Coat each cutlet in flour, dip in egg, then press into the breadcrumb mixture until fully coated. Rest on a rack for 10 minutes.
04 - Heat the oil in a large skillet over medium heat. Fry the cutlets in batches for 3-4 minutes per side until deep golden and the center reaches 165°F. Transfer to a rack.
05 - Heat the broiler. Mix melted butter with grated garlic, brush it on the cut sides of the rolls, and broil cut side up for 1-2 minutes until lightly toasted.
06 - Place a cutlet in each roll. Spoon warm marinara over the chicken, top with mozzarella and provolone, and broil just until the cheese is melted and bubbling. Sprinkle with basil or parsley and serve hot.
