Heat the oven to 400°F. Slice the top from the garlic head, drizzle with olive oil, add a pinch of salt, wrap in foil, and roast for 30-35 minutes until the cloves are soft and golden.

Reduce the oven temperature to 375°F. Let the garlic cool for a few minutes, then squeeze the softened cloves into a mixing bowl.

Add the softened cream cheese, ricotta, mozzarella, cheddar, rosemary, salt, and black pepper to the bowl. Stir until evenly combined and mostly smooth.

Spread the mixture into a 1-quart baking dish. Bake for 18-20 minutes, until the edges bubble and the top is lightly golden in spots.

Let the dish rest for 5 minutes. Drizzle with warm hot honey, sprinkle with Aleppo pepper and extra rosemary, and serve warm with toasted bread, crackers, or vegetables.
