01 -
Heat 1 tablespoon oil in a skillet over medium-high heat. Add shrimp, garlic, smoked paprika, salt, and pepper. Cook for 2-3 minutes, turning once, until the shrimp are pink and opaque.
02 -
Transfer the shrimp to a cutting board. Let cool for 5 minutes, then chop into small bite-size pieces.
03 -
In a bowl, stir cream cheese, mozzarella, Parmesan, scallions, parsley, lemon juice, and chopped shrimp until thick and evenly combined. Chill for 10-15 minutes if the filling feels soft.
04 -
Place one egg roll wrapper on the counter in a diamond shape. Spoon 2-3 tablespoons filling near the lower corner. Fold the bottom corner over the filling, fold in the sides, and roll tightly.
05 -
Brush the top corner with beaten egg and press to seal. Repeat with the remaining wrappers and keep finished rolls covered with a towel while you work.
06 -
Heat 1 inch of oil in a deep skillet to 350°F. Fry 3-4 rolls at a time for 2-3 minutes per side, until crisp and deep golden brown.
07 -
Transfer the rolls to a wire rack. Rest for 1-2 minutes, then serve hot with sweet chili sauce or spicy mayo.
