# Ingredients:

For the shrimp filling

01 - 1 lb (450 g) medium shrimp, peeled and deveined
02 - 1 tablespoon neutral oil
03 - 2 cloves garlic, minced
04 - 1/2 teaspoon smoked paprika
05 - 1/2 teaspoon kosher salt
06 - 1/4 teaspoon black pepper
07 - 6 oz (170 g) cream cheese, softened
08 - 1 cup (115 g) shredded mozzarella cheese
09 - 1/4 cup (25 g) grated Parmesan cheese
10 - 2 scallions, thinly sliced
11 - 2 tablespoons chopped fresh parsley
12 - 1 teaspoon fresh lemon juice

For rolling and frying

13 - 8 egg roll wrappers
14 - 1 large egg, beaten
15 - Vegetable or canola oil, for frying
16 - Sweet chili sauce or spicy mayo, for serving

# Instructions:

01 - Heat 1 tablespoon oil in a skillet over medium-high heat. Add shrimp, garlic, smoked paprika, salt, and pepper. Cook for 2-3 minutes, turning once, until the shrimp are pink and opaque.
02 - Transfer the shrimp to a cutting board. Let cool for 5 minutes, then chop into small bite-size pieces.
03 - In a bowl, stir cream cheese, mozzarella, Parmesan, scallions, parsley, lemon juice, and chopped shrimp until thick and evenly combined. Chill for 10-15 minutes if the filling feels soft.
04 - Place one egg roll wrapper on the counter in a diamond shape. Spoon 2-3 tablespoons filling near the lower corner. Fold the bottom corner over the filling, fold in the sides, and roll tightly.
05 - Brush the top corner with beaten egg and press to seal. Repeat with the remaining wrappers and keep finished rolls covered with a towel while you work.
06 - Heat 1 inch of oil in a deep skillet to 350°F. Fry 3-4 rolls at a time for 2-3 minutes per side, until crisp and deep golden brown.
07 - Transfer the rolls to a wire rack. Rest for 1-2 minutes, then serve hot with sweet chili sauce or spicy mayo.
