Juicy garlic shrimp in a silky cream sauce spooned over buttery mashed potatoes for a cozy 35-minute dinner.

# Ingredients:

For the mashed potatoes

01 - 2 lb (900 g) Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
02 - 1 1/2 teaspoons kosher salt, plus more for the water
03 - 4 tablespoons (56 g) unsalted butter
04 - 1/2 cup (120 ml) whole milk, warmed
05 - 1/4 cup (60 ml) heavy cream, warmed
06 - 1/4 teaspoon black pepper

For the creamy garlic shrimp

07 - 1 lb (450 g) large shrimp, peeled and deveined
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon black pepper
10 - 1 tablespoon olive oil
11 - 3 tablespoons (42 g) unsalted butter
12 - 5 garlic cloves, minced
13 - 3/4 cup (180 ml) heavy cream
14 - 1/3 cup (30 g) finely grated parmesan cheese
15 - 1 teaspoon lemon juice, plus wedges for serving
16 - 1 tablespoon chopped fresh parsley
17 - 1/4 teaspoon red pepper flakes, optional

# Instructions:

01 - Put the potatoes in a large pot and cover with cold water by 1 inch. Salt the water well, bring to a boil, then simmer for 15-18 minutes until the potatoes are very tender when pierced.
02 - Drain the potatoes and return them to the hot pot for 1 minute. Add butter, warm milk, warm cream, salt, and pepper, then mash until smooth and creamy. Cover and keep warm.
03 - Pat the shrimp dry with paper towels. Toss with salt and black pepper so the surface is dry and evenly seasoned.
04 - Heat olive oil in a large skillet over medium-high heat. Add the shrimp in one layer and cook for 1-2 minutes per side until pink and just opaque. Transfer to a plate.
05 - Lower the heat to medium. Melt the butter in the same skillet, add the garlic and red pepper flakes, and cook for 30-45 seconds until fragrant. Stir in the heavy cream and simmer gently for 2-3 minutes.
06 - Stir in the parmesan until melted, then add lemon juice. Return the shrimp and any juices to the skillet and warm for 30-60 seconds, just until coated and hot.
07 - Spoon the mashed potatoes onto plates or shallow bowls. Top with creamy garlic shrimp, extra sauce, parsley, and lemon wedges.

# Good to know:

01 - Serve immediately for the best shrimp texture.
02 - Use freshly grated parmesan so the sauce melts smoothly.
03 - If the sauce thickens too much, loosen it with a splash of milk.
