Slow Cooker Chicken Gnocchi Soup (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1½ pounds boneless, skinless chicken thighs or breasts
02 - 1 pound potato gnocchi

→ Vegetables

03 - 3-4 medium carrots, peeled and chopped
04 - 1-2 stalks celery, chopped
05 - ½ medium yellow or white onion, chopped
06 - 4-5 cloves garlic, minced
07 - 3 cups baby spinach

→ Seasonings & Liquids

08 - 2 tablespoons fresh parsley, chopped
09 - 1 tablespoon Italian seasoning
10 - Salt and black pepper to taste
11 - 1 teaspoon Better than Bouillon chicken base (optional)
12 - Pinch red pepper flakes (optional)
13 - 4 cups low-sodium chicken stock
14 - 1 cup cream or half and half
15 - 1-2 tablespoons cornstarch

→ For Serving

16 - 4 slices cooked bacon, crumbled (optional)

# Instructions:

01 - Add your chicken, veggies (carrots, celery, onion), parsley, garlic, and seasonings to the slow cooker. Stir in the bouillon and pepper flakes if using.
02 - Pour in that chicken stock, give it a gentle stir, cover and let it cook away - 6-8 hours on low or 4 hours on high.
03 - Once time's up, shred that chicken right in the pot using two forks.
04 - Mix your cream with cornstarch, add it to the pot along with the gnocchi and spinach. Cook on high for another 30-45 minutes.
05 - If you want it thicker, add more cornstarch mixed with cold water. Give it a final taste and adjust the seasonings.
06 - Ladle into bowls and top with crumbled bacon if you like!
