Juicy baked chicken breasts covered in creamy Caesar sauce, parmesan, and mozzarella for an easy weeknight dinner.

# Ingredients:

For the chicken

01 - 4 boneless, skinless chicken breasts, about 2 lb (900 g)
02 - 1 tablespoon olive oil, for the baking dish
03 - 1/2 teaspoon kosher salt
04 - 1/2 teaspoon black pepper
05 - 1/2 teaspoon garlic powder

For the Caesar sauce

06 - 1 cup (240 ml) creamy Caesar dressing
07 - 1/2 cup (120 g) sour cream
08 - 3/4 cup (75 g) freshly grated parmesan cheese, divided
09 - 1 teaspoon fresh lemon juice
10 - 1/2 teaspoon Italian seasoning
11 - 1 cup (115 g) shredded mozzarella cheese
12 - 2 tablespoons chopped fresh parsley, for serving

# Instructions:

01 - Preheat the oven to 375°F. Lightly coat a 9x13-inch baking dish with olive oil.
02 - Pat the chicken dry and pound the thicker ends until the pieces are about 3/4 inch thick. Season both sides with salt, pepper, and garlic powder.
03 - In a bowl, stir together the Caesar dressing, sour cream, 1/2 cup parmesan, lemon juice, and Italian seasoning until smooth.
04 - Place the chicken in the baking dish and spoon the Caesar sauce evenly over the top. Cover with foil and bake for 20 minutes.
05 - Remove the foil. Sprinkle with mozzarella and the remaining 1/4 cup parmesan, then bake uncovered for 8-12 minutes more, until the thickest chicken breast reaches 165°F.
06 - Broil for 1-2 minutes if you want a more golden top. Rest for 5 minutes, then sprinkle with parsley and spoon extra sauce over each serving.

# Good to know:

01 - Pound chicken evenly for the juiciest texture.
02 - Use a thick creamy Caesar dressing, not a thin vinaigrette.
03 - Check dressing labels if cooking gluten-free.
