Cream Cheese Bacon Stuffed Doritos (Print version)

Creamy cheddar bacon filling sandwiched between Doritos, coated in crushed chips, and baked until crisp.

# Ingredients:

For the stuffed Doritos

01 - 1 large 9.25 to 10 oz (260 to 285 g) bag Nacho Cheese Doritos
02 - 8 oz (225 g) full-fat cream cheese, softened
03 - 1 cup (115 g) shredded sharp cheddar cheese
04 - 6 slices bacon, cooked crisp and finely chopped
05 - 2 tablespoons finely sliced green onions or chives
06 - 1/2 teaspoon garlic powder
07 - 1/4 teaspoon onion powder
08 - 1/4 teaspoon smoked paprika
09 - 1/4 teaspoon black pepper

For coating

10 - 1/2 cup (65 g) all-purpose flour
11 - 2 large eggs
12 - 1 tablespoon milk or water
13 - 2 cups (about 70 g) crushed Doritos, from broken chips in the bag
14 - Cooking spray or 1 tablespoon neutral oil for brushing

For serving

15 - Ranch dressing, salsa, or sour cream, optional
16 - Extra sliced chives, optional

# Instructions:

01 - In a medium bowl, stir the softened cream cheese, cheddar, bacon, green onions, garlic powder, onion powder, smoked paprika, and black pepper until evenly combined.
02 - Pick out 48 large whole Doritos for the sandwiches. Crush enough broken chips to make about 2 cups of coarse crumbs and place them in a shallow dish.
03 - Spoon or pipe about 1 teaspoon filling onto 24 whole chips. Top each with another chip and press gently. Place on a tray and freeze for 15-20 minutes, until firm.
04 - Heat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Put the flour in one shallow dish, then whisk the eggs with milk or water in a second dish.
05 - Working gently, dip each chilled stuffed chip in flour, then egg wash, then crushed Doritos. Place on the prepared baking sheet with a little space between each bite.
06 - Spray or brush the coated bites lightly with oil. Bake for 8-10 minutes, until the outside is crisp and the filling is hot. Let stand for 3 minutes before serving.

01 - Best served warm, 3-5 minutes after baking.
02 - Freeze the filled chips before coating so they hold together.
03 - Use a second bag of Doritos if you want extra large matching chips for a neater party tray.
