Cozy Potato Kielbasa Soup (Print version)

Smoky kielbasa, tender potatoes, sweet corn, and a creamy paprika broth make this a sturdy one-pot soup for cold nights.

# Ingredients:

For the soup base

01 - 1 tablespoon olive oil
02 - 14 oz (400 g) smoked kielbasa, sliced into 1/4-inch rounds
03 - 2 tablespoons unsalted butter
04 - 1 medium yellow onion, diced
05 - 2 medium carrots, peeled and diced
06 - 2 celery ribs, diced
07 - 3 cloves garlic, minced
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon dried thyme
10 - 2 tablespoons all-purpose flour
11 - 4 cups (960 ml) low-sodium chicken broth

For simmering and finishing

12 - 1 1/2 lb (680 g) Yukon Gold potatoes, cut into 3/4-inch cubes
13 - 3/4 cup (110 g) frozen or fresh corn kernels
14 - 1 cup (240 ml) heavy cream
15 - 1/2 teaspoon kosher salt, plus more to taste
16 - 1/2 teaspoon black pepper
17 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Heat olive oil in a Dutch oven or soup pot over medium-high heat. Add the kielbasa slices and cook for 5-7 minutes, stirring occasionally, until browned at the edges. Transfer to a plate.
02 - Reduce heat to medium. Add butter, onion, carrots, and celery to the same pot. Cook for 5-6 minutes, stirring often, until the onion is soft and glossy.
03 - Stir in garlic, smoked paprika, thyme, flour, salt, and pepper. Cook for 1 minute, stirring constantly, so the garlic smells fragrant and the flour coats the vegetables.
04 - Slowly pour in the chicken broth while scraping up browned bits from the bottom of the pot. Add the potatoes, bring to a boil, then reduce to a steady simmer. Cook for 15-18 minutes until the potatoes are fork-tender.
05 - Stir in the corn, heavy cream, and browned kielbasa. Simmer gently for 4-5 minutes until hot. Do not boil hard after adding the cream.
06 - Taste and adjust salt and pepper. Sprinkle with parsley and serve hot with bread or a crisp salad.

# Good to know:

01 - Best served hot after a 5 minute rest, which lets the broth thicken slightly.
02 - For a thicker soup, mash a few potato pieces in the pot before adding the cream.
03 - Use fully cooked smoked kielbasa for this recipe.
