01 -
Place the chopped bacon in a wide skillet over medium heat. Cook for 8-10 minutes, stirring often, until crisp. Transfer to a paper towel-lined plate and leave about 1 tablespoon of drippings in the skillet.
02 -
Add the potatoes and onion to the skillet. Cook for 5 minutes, stirring once or twice, until the onion starts to soften and some potato edges pick up color.
03 -
Stir in the garlic for 30 seconds. Add the chicken broth and ranch seasoning, scraping up the browned bits from the bottom of the pan.
04 -
Cover the skillet and cook over medium-low heat for 10-12 minutes, or until the potatoes are nearly fork-tender.
05 -
Add the green beans, cover again, and cook for 7-9 minutes until the beans are tender and bright green and the potatoes are fully tender.
06 -
Uncover and simmer for 2-3 minutes to reduce excess liquid. Stir in the butter, black pepper, and most of the bacon. Taste before adding salt.
07 -
Transfer to a serving dish and top with the remaining crispy bacon and parsley. Serve warm.
