Country-Style Ranch Green Beans & Potatoes with Crispy Bacon Bliss (Print version)

Tender baby potatoes and green beans tossed with ranch seasoning, butter, and crisp bacon for a cozy country-style side dish.

# Ingredients:

For the skillet

01 - 6 slices thick-cut bacon, chopped
02 - 1 1/2 lb (680 g) baby gold or red potatoes, halved or quartered
03 - 1 small yellow onion, diced
04 - 3 cloves garlic, minced
05 - 3/4 cup (180 ml) low-sodium chicken broth
06 - 1 packet (1 oz or 28 g) ranch seasoning
07 - 1 lb (450 g) fresh green beans, trimmed and halved
08 - 2 tablespoons unsalted butter
09 - 1/2 teaspoon black pepper
10 - Salt, only if needed
11 - 2 tablespoons chopped fresh parsley, optional

# Instructions:

01 - Place the chopped bacon in a wide skillet over medium heat. Cook for 8-10 minutes, stirring often, until crisp. Transfer to a paper towel-lined plate and leave about 1 tablespoon of drippings in the skillet.
02 - Add the potatoes and onion to the skillet. Cook for 5 minutes, stirring once or twice, until the onion starts to soften and some potato edges pick up color.
03 - Stir in the garlic for 30 seconds. Add the chicken broth and ranch seasoning, scraping up the browned bits from the bottom of the pan.
04 - Cover the skillet and cook over medium-low heat for 10-12 minutes, or until the potatoes are nearly fork-tender.
05 - Add the green beans, cover again, and cook for 7-9 minutes until the beans are tender and bright green and the potatoes are fully tender.
06 - Uncover and simmer for 2-3 minutes to reduce excess liquid. Stir in the butter, black pepper, and most of the bacon. Taste before adding salt.
07 - Transfer to a serving dish and top with the remaining crispy bacon and parsley. Serve warm.

01 - Best served warm while the bacon is crisp.
02 - If using canned green beans, add them during the final 3-5 minutes only.
