Cottage Cheese Chicken Salad (Print Version)

# Ingredients:

01 - 1 cup rotisserie chicken, chopped into small chunks
02 - 1/2 cup low-fat (2% milkfat) cottage cheese
03 - 1/4 cup jarred banana peppers (mild or spicy), diced
04 - 1/4 cup red onion, diced
05 - 1/4 cup celery, diced
06 - 2 tablespoons green onion, thinly sliced

→ Seasonings

07 - 1/2 teaspoon Dijon or spicy mustard
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon salt and pepper

# Instructions:

01 - Pulse cottage cheese, mustard, garlic powder, salt and pepper in food processor until smooth.
02 - Mix blended cottage cheese mixture with chicken, banana peppers, red onion, celery and green onion in large bowl until well combined. Adjust seasonings to taste. Serve immediately or refrigerate.
