Easy Homemade Costco Chicken Bake (Print version)

A crisp, cheesy copycat Costco chicken bake made with pizza dough, chicken, bacon, Caesar dressing, and mozzarella.

# Ingredients:

For the chicken bakes

01 - 1 lb (450 g) pizza dough, at room temperature
02 - 2 cups (280 g) cooked chicken, chopped
03 - 6 slices bacon, cooked crisp and chopped
04 - 1/2 cup (120 ml) creamy Caesar dressing, plus 1 tablespoon for brushing
05 - 1 1/2 cups (170 g) shredded mozzarella cheese
06 - 1/2 cup (45 g) grated Parmesan cheese, divided
07 - 1/2 teaspoon black pepper
08 - 1 tablespoon olive oil, optional for brushing
09 - All-purpose flour, for rolling

# Instructions:

01 - Heat the oven to 425°F. Line a large baking sheet with parchment paper. Let the pizza dough sit at room temperature until pliable.
02 - In a bowl, combine the chicken, bacon, Caesar dressing, mozzarella, 1/4 cup Parmesan, and black pepper. Stir until coated but not wet.
03 - Divide the dough into 4 pieces. On a lightly floured surface, roll each piece into a 6x8-inch rectangle.
04 - Spoon one-quarter of the filling down the center of each rectangle. Fold in the short ends, roll tightly from a long side, and pinch the seam closed.
05 - Place the rolls seam-side down on the baking sheet. Brush with Caesar dressing or olive oil and sprinkle with the remaining Parmesan.
06 - Bake for 18-22 minutes, until the crust is golden brown and firm. Rest for 5 minutes before serving.
