Heat the oil in a large skillet over medium-high heat. Add the onion, ground beef, and salt. Cook for 7-8 minutes, breaking the beef into very small crumbles, until browned and no pink remains.

Stir in the tomato paste, chili powder, cumin, paprika, garlic powder, onion powder, and cayenne. Cook for 1 minute, stirring constantly, until the paste darkens slightly and smells toasted.

Add the beef broth, tomato sauce, vinegar, and sugar. Reduce the heat to medium-low and simmer for 12-15 minutes, stirring often, until the chili is thick, glossy, and spoonable.

Wrap the tortillas in a damp paper towel and microwave for 30-45 seconds, or warm them one at a time in a dry skillet until flexible.

Spoon about 1/2 cup of chili down the center of each tortilla. Top with about 1/3 cup cheddar. Fold in the sides, roll tightly, and place seam-side down.

Let the burritos rest for 1-2 minutes so the hot chili melts the cheese. For a lightly toasted outside, warm them seam-side down in a dry skillet for 1-2 minutes per side.
