Copycat Subway BMT Sandwich Casserole (Print version)

A hot, cheesy Subway BMT-inspired casserole layered with Italian bread, deli meats, provolone, vegetables, and zesty sub sauce.

# Ingredients:

For the casserole

01 - 8 cups (about 340 g) cubed Italian bread or hoagie rolls
02 - 1 tablespoon olive oil
03 - 6 oz (170 g) deli ham, chopped
04 - 5 oz (140 g) Genoa salami, chopped
05 - 4 oz (115 g) pepperoni slices, divided
06 - 8 oz (225 g) provolone cheese, shredded or chopped, divided
07 - 1 cup (150 g) diced tomato, drained
08 - 1/2 cup (60 g) thinly sliced red onion
09 - 1/2 cup (75 g) sliced banana peppers, drained

For the custard and finish

10 - 4 large eggs
11 - 1 cup (240 ml) whole milk
12 - 1/2 cup (120 ml) zesty Italian dressing
13 - 1 teaspoon dried oregano
14 - 1/2 teaspoon garlic powder
15 - 1/4 teaspoon black pepper
16 - 1/4 teaspoon kosher salt
17 - 2 cups (90 g) shredded iceberg lettuce, for serving
18 - Extra Italian dressing or sweet onion sauce, for serving

# Instructions:

01 - Heat the oven to 375°F. Toss the bread cubes with olive oil on a sheet pan and bake for 8-10 minutes, until dry on the edges but not fully crisp.
02 - Grease a 9x13-inch baking dish. Add half the toasted bread, half the ham, salami, pepperoni, provolone, tomatoes, onion, and banana peppers. Repeat with the remaining bread, meats, vegetables, and most of the cheese, saving a little cheese and pepperoni for the top.
03 - In a bowl, whisk the eggs, milk, Italian dressing, oregano, garlic powder, black pepper, and salt until smooth.
04 - Pour the custard evenly over the casserole. Press the bread lightly with a spatula so the top pieces absorb some liquid. Let stand for 10 minutes.
05 - Cover the dish with foil and bake for 25 minutes, until the center is hot and beginning to set.
06 - Remove the foil. Sprinkle with the reserved provolone and pepperoni, then bake for 12-15 minutes more, until the cheese is melted and the edges are golden.
07 - Let the casserole rest for 10 minutes. Top each serving with shredded lettuce and a drizzle of Italian dressing or sweet onion sauce.

# Good to know:

01 - Best served hot with cold lettuce added after baking.
02 - Use day-old bread if you have it. It holds its shape better.
03 - Drain tomatoes and banana peppers well to avoid a wet center.
