Preheat the oven to 200 degrees Fahrenheit.

Add the sliced apples to a large bowl. Coat the apples thoroughly with cinnamon and sugar.

Spray a baking sheet with cooking spray or line it with parchment paper. Arrange the apple slices flat on the pan without overlapping. Use two pans if necessary.

Bake for 2-3 hours until the apple chips are dry but still slightly soft. Allow them to cool completely before storing in an airtight container for up to 4 days.
