Cinnamon Apple Cake with Greek Yogurt and Glaze (Print version)

# Ingredients:

For the cake

01 - 1/2 cup (115 g) unsalted butter, melted and cooled
02 - 3/4 cup (150 g) granulated sugar
03 - 2 large eggs, room temperature
04 - 2/3 cup (160 g) plain Greek yogurt
05 - 1/2 cup (120 ml) whole milk
06 - 1 teaspoon vanilla extract
07 - 1/2 teaspoon kosher salt
08 - 1 teaspoon ground cinnamon
09 - 2 1/2 cups (315 g) all-purpose flour
10 - 2 teaspoons baking powder
11 - 1/2 teaspoon baking soda
12 - 2 medium firm apples, peeled, cored, and diced, about 1 1/2 cups (240 g)

For the cinnamon swirl

13 - 1/2 cup (115 g) unsalted butter, melted
14 - 2/3 cup (135 g) granulated sugar
15 - 2 teaspoons ground cinnamon

For the glaze

16 - 3/4 cup (90 g) powdered sugar, sifted
17 - 2-3 tablespoons (30-45 ml) whole milk
18 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat the oven to 350°F (180°C). Line a 9-inch (23 cm) square baking pan with parchment paper, leaving overhang on two sides.
02 - Peel, core, and dice the apples into small 1/2-inch pieces. Set them aside while you mix the batter.
03 - In a large bowl, whisk melted butter, sugar, eggs, Greek yogurt, milk, vanilla, salt, and cinnamon until smooth.
04 - Add flour, baking powder, and baking soda. Stir gently until almost combined, with a few streaks of flour remaining.
05 - Fold in the diced apples with a spatula until evenly distributed. Do not overmix.
06 - Spread the batter into the prepared pan. Stir the swirl ingredients together, spoon them over the top, and drag a butter knife through the surface to create ribbons.
07 - Bake for 45-50 minutes, until the top is golden, the center springs back lightly, and a toothpick inserted in the middle comes out with moist crumbs.
08 - Cool for at least 20 minutes. Whisk powdered sugar, milk, and vanilla until smooth, then drizzle over the cake before slicing.
