Easy 5-Minute Cilantro Lime Crema (Print version)

A cool, tangy cilantro lime crema made in 5 minutes with sour cream, lime, cilantro, garlic, and a quick blend.

# Ingredients:

For the crema

01 - 3/4 cup (180 g) sour cream or Mexican crema
02 - 1/4 cup (55 g) mayonnaise
03 - 1/2 cup (15 g) packed fresh cilantro leaves and tender stems
04 - 1 lime, zested and juiced, about 2 tablespoons juice
05 - 1 small garlic clove, grated or minced
06 - 1/4 teaspoon fine salt, plus more to taste
07 - 1/2 small jalapeno, seeded and chopped, optional
08 - 1-2 tablespoons cold water, as needed for thinning

# Instructions:

01 - Rinse and dry the cilantro well. Zest the lime, then cut it and squeeze the juice.
02 - Add sour cream, mayonnaise, cilantro, lime zest, lime juice, garlic, salt, and jalapeno if using to a blender or small food processor. Blend just until smooth and pale green.
03 - Add cold water 1 teaspoon at a time until the crema is thick but drizzleable. Taste and add more salt or lime juice if needed.
04 - Serve right away over tacos, bowls, nachos, chicken, fish, or vegetables. For a rounder flavor, chill for 10-15 minutes before serving.

# Good to know:

01 - Makes about 1 cup, enough for 8 small servings.
02 - Best served cold or cool, not heated in a pan.
03 - Use tender cilantro stems because they blend smoothly and carry good flavor.
