Christmas Stuffed Pasta (Print Version)

# Ingredients:

01 - 1 stick salted butter.
02 - 3 cups sliced mushrooms.
03 - 2 teaspoons dried thyme.
04 - 2 cloves garlic, chopped.
05 - 2 teaspoons dried basil.
06 - 2 teaspoons dried oregano.
07 - 1/4 cup plain flour.
08 - 2 cups milk.
09 - 2 cups white wine or broth.
10 - 1 cup mozzarella cheese.
11 - 3/4 cup parmesan cheese.
12 - 1 pound large pasta shells.
13 - 2 cups ricotta cheese.
14 - 2 cups provolone cheese.
15 - 2 packages frozen spinach.

# Instructions:

01 - Preheat oven to 350°F. Grease 9x13 pan.
02 - Sauté mushrooms in butter until golden, add herbs.
03 - Make roux with butter and flour, add wine and milk. Stir in cheese.
04 - Cook shells until al dente.
05 - Mix ricotta, provolone and spinach.
06 - Layer sauce, fill shells with ricotta mix, top with cheese and mushrooms.
07 - Cover and bake 25 minutes, uncover and bake 15-20 minutes more.

01 - Can be made ahead.
02 - Wine can be substituted with broth.
03 - Freezes well.
