Thick & Creamy Chocolate Protein Pudding (Print version)

A rich, spoonable chocolate protein pudding made with Greek yogurt, cocoa, and whey protein in about 5 minutes.

# Ingredients:

For the pudding

01 - 1 1/2 cups (360 g) plain Greek yogurt, 2 percent or whole milk
02 - 1 scoop (30 g) chocolate whey protein powder
03 - 2 tablespoons (10 g) unsweetened cocoa powder
04 - 1 tablespoon (15 ml) maple syrup, plus more to taste
05 - 1 teaspoon vanilla extract
06 - 1-2 tablespoons (15-30 ml) milk, dairy or unsweetened almond milk
07 - 1 pinch fine salt

For topping

08 - 2 tablespoons whipped cream, optional
09 - 1 tablespoon shaved dark chocolate, optional
10 - Fresh berries, optional

# Instructions:

01 - Add the Greek yogurt to a medium bowl and stir it until smooth so the powders blend in more easily.
02 - Sprinkle in the chocolate protein powder, cocoa powder, and salt. Whisk slowly at first, then more firmly once the powder starts to hydrate.
03 - Add maple syrup, vanilla, and 1 tablespoon milk. Whisk for 45-60 seconds until glossy and thick with no dry pockets. Add the remaining milk only if the pudding is too stiff.
04 - Let the pudding sit for 5 minutes, then stir again. Taste and add a little more maple syrup if needed.
05 - Divide into 2 cups. Top with whipped cream, shaved chocolate, and berries, or cover and chill until ready to serve.
