One Pan Chili Lime Chicken & Rice (Print Version)

# Ingredients:

→ Protein

01 - 6 boneless skinless chicken thighs (or 4 chicken breasts, pounded to even thickness)

→ Seasonings

02 - 3 teaspoons chili powder
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1/4 teaspoon cayenne pepper
07 - 1 teaspoon salt
08 - 1/4 teaspoon pepper

→ Other Ingredients

09 - 2 tablespoons vegetable oil
10 - 1 lime, juiced (plus additional wedges for serving)
11 - Fresh cilantro for topping
12 - 1 cup uncooked white rice
13 - 2 1/4 cups chicken broth

# Instructions:

01 - Combine chili powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Season chicken with half the mixture, reserve the rest.
02 - Heat oil in pan over medium heat. Cook chicken 3-4 minutes per side until browned. Remove from pan.
03 - Add rice, remaining seasonings, chicken broth, and lime juice to pan and stir. Place chicken on top of rice.
04 - Cover and cook 20-25 minutes until liquid is absorbed. Fluff rice, top with cilantro and fresh lime juice before serving.
