Chicken Zucchini Pasta (Print Version)

# Ingredients:

01 - 1 tsp olive oil
02 - 340g Italian Style Chicken Sausages, sliced into discs
03 - 1 cup onion, diced
04 - ½ tsp salt
05 - 2 tsp garlic, minced
06 - ¼ tsp crushed red pepper flakes (optional)
07 - 950ml chicken broth
08 - 225g uncooked Radiatore pasta (or any small pasta shape)
09 - 2 cups zucchini, chopped
10 - 2 tbsp fresh lemon juice
11 - ¼ cup Parmesan cheese, freshly grated, divided
12 - 1 cup grape tomatoes, halved
13 - ⅓ cup fresh basil, chopped

# Instructions:

01 - Heat a large skillet over medium heat and add the olive oil. Once hot, add the chicken sausages and diced onion, cooking until sausages are nicely browned and onion is tender.
02 - Season with salt, red pepper flakes and garlic, cooking until fragrant, about 1 minute. Pour in the chicken broth, scraping the bottom of the pan to release any browned bits.
03 - Bring mixture to a boil then add the uncooked pasta. Stir frequently for about 10 minutes, until pasta is mostly tender, then add the chopped zucchini.
04 - Continue cooking for an additional 3 minutes until zucchini is tender and most of the chicken broth is absorbed into the pasta. Stir in the lemon juice, 3 tablespoons of the parmesan cheese and the grape tomatoes.
05 - Remove from heat and garnish with fresh basil and the remaining 1 tablespoon of Parmesan cheese before serving.
