# Ingredients:

For the chicken

01 - 2 large boneless skinless chicken breasts, about 1 1/2 lb (680 g), sliced into 4 thin cutlets
02 - 1 teaspoon kosher salt, divided
03 - 1/2 teaspoon black pepper, divided
04 - 1 teaspoon Italian seasoning
05 - 2 tablespoons olive oil

For the creamy Parmesan sauce

06 - 2 tablespoons unsalted butter
07 - 8 oz (225 g) cremini mushrooms, sliced
08 - 4 cloves garlic, minced
09 - 4 cups (120 g) fresh baby spinach
10 - 3/4 cup (180 ml) low-sodium chicken broth
11 - 1 cup (240 ml) heavy cream
12 - 3/4 cup (75 g) freshly grated Parmesan cheese
13 - 1 teaspoon fresh lemon juice, plus more to taste
14 - 2 tablespoons chopped fresh parsley, for serving

# Instructions:

01 - Slice the chicken breasts horizontally into 4 thin cutlets. Season both sides with about 3/4 teaspoon salt, 1/4 teaspoon pepper, and the Italian seasoning.
02 - Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden. Transfer to a plate. It will finish cooking in the sauce.
03 - Reduce the heat to medium. Add the butter and mushrooms to the same skillet. Cook for 6-8 minutes, stirring only now and then, until the mushrooms are browned and their moisture has cooked off.
04 - Add the garlic and cook for 30 seconds. Stir in the spinach and cook for 1-2 minutes until just wilted.
05 - Pour in the chicken broth and scrape up the browned bits from the pan. Add the heavy cream and bring to a gentle simmer. Stir in the Parmesan until melted and smooth.
06 - Return the chicken and any juices to the skillet. Simmer gently for 4-6 minutes, until the chicken reaches 165°F. Stir in lemon juice, adjust salt and pepper, and finish with parsley.
