Chicken Spaghetti Burrata Lemon (Print Version)

Spaghetti and chicken paired with burrata, lemon garlic butter sauce, roasted tomatoes, basil, and pine nuts.

# Ingredients:

→ Roasted Tomatoes

01 - 285 g cherry tomatoes, halved
02 - 30 ml extra-virgin olive oil
03 - 3 cloves garlic, finely minced
04 - Salt, to taste
05 - Black pepper, to taste

→ Chicken Pasta

06 - 680 g skinless boneless chicken breast (2 large pieces)
07 - 1.25 ml fine sea salt
08 - 10 ml smoked paprika
09 - 5 ml Italian seasoning
10 - 30 ml extra-virgin olive oil
11 - Half a lemon, thinly sliced
12 - 4 cloves garlic, minced
13 - 56 g unsalted butter
14 - 225 g spaghetti
15 - 225 g Burrata cheese

→ Garnish

16 - 12 g fresh basil, chopped
17 - 18 g pine nuts, lightly toasted

# Instructions:

01 - Preheat oven to 200°C. Toss halved cherry tomatoes with olive oil, minced garlic, salt, and black pepper. Arrange on a parchment-lined baking tray in a single layer. Roast for 20 minutes while you proceed with other steps.
02 - Slice each chicken breast in half horizontally to create thin cutlets. Season both sides with salt, smoked paprika, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Once hot, add chicken and sear for 5 minutes per side or until thoroughly cooked. Transfer cooked chicken to a plate and slice thinly.
03 - In the same skillet, add lemon slices, minced garlic, and butter. Sauté over low-medium heat for 2 minutes until garlic softens and the lemon releases its juice. Remove skillet from heat.
04 - Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain thoroughly.
05 - Add drained spaghetti to the skillet with lemon, garlic, and butter. Toss to coat evenly and absorb flavors. Discard lemon slices.
06 - Top the pasta with sliced chicken and roasted tomatoes, gently incorporating into the spaghetti.
07 - Divide pasta among serving plates. Tear Burrata and distribute evenly on top. Garnish with chopped fresh basil and toasted pine nuts before serving.
