Preheat a large skillet over medium-high heat. Place chicken patties in the pan and cook for 6 minutes. Flip and continue cooking until golden and an internal temperature of 74°C is reached.

Remove patties from the skillet and let rest briefly. On a cutting board, slice each patty into 6 uniform strips.

Lay out the tortilla wraps. Evenly distribute half the mozzarella down the centre of each wrap. Arrange 6 chicken strips on top, spoon pizza sauce over the chicken, then layer with 6 pepperoni slices per wrap. Sprinkle the remaining mozzarella on top.

Fold the sides of each tortilla inward to enclose the filling securely.

Heat a large skillet over medium-low heat. Place the folded wraps seam-side down in the skillet. Cook until the underside is crisp and deeply golden, about 5 minutes, then flip and brown the other side for an additional 5 minutes, ensuring the cheese is melted through.

Transfer toasted wraps to a cutting board. Slice each in half if desired and serve immediately while hot.
