Chicken Avocado Melt Sandwich (Print Version)

# Ingredients:

01 - Boneless skinless chicken breasts (2).
02 - Salt and pepper to taste.
03 - Olive oil (1 tablespoon plus more for grilling).
04 - Ripe avocado (1).
05 - Sliced cheese of choice (4 slices).
06 - Bread slices (4).
07 - Mayonnaise (2 tablespoons).
08 - Dijon mustard (1 tablespoon).
09 - Red onion, thinly sliced (1 small).
10 - Tomato, sliced (1).
11 - Butter or olive oil for grilling.

# Instructions:

01 - Season chicken breasts, cook in oil 6-7 minutes per side until done.
02 - Slice avocado, prepare cheese, onions and tomatoes.
03 - Layer mayonnaise and mustard on bread slices.
04 - Layer chicken, avocado, cheese, onion and tomato on bread.
05 - Cook sandwiches in butter until golden and cheese melts, about 3-4 minutes per side.
