Chicken Alfredo Texas Toast (Print version)

Crisp garlic Texas toast piled with seasoned chicken, Alfredo sauce, bacon, and melted mozzarella for a fast family dinner.

# Ingredients:

For the chicken

01 - 1 1/4 lb (565 g) boneless skinless chicken breast, cut into 1/2-inch pieces
02 - 1 tablespoon olive oil
03 - 1 teaspoon Italian seasoning
04 - 1/2 teaspoon paprika
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon kosher salt
08 - 1/4 teaspoon black pepper

For the toasts

09 - 8 slices frozen garlic Texas toast
10 - 1 1/4 cups (300 ml) Alfredo sauce, warmed
11 - 1/3 cup (30 g) grated Parmesan cheese
12 - 1 1/2 cups (170 g) shredded mozzarella cheese
13 - 5 slices cooked bacon, crumbled
14 - 1 tablespoon chopped fresh parsley, for garnish
15 - Extra warmed Alfredo sauce, for serving, optional

# Instructions:

01 - Preheat the oven according to the Texas toast package directions, usually 425°F. Line a large sheet pan with parchment paper.
02 - Pat the chicken dry. Toss it with Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
03 - Heat the olive oil in a large skillet over medium-high heat. Add the chicken in an even layer and cook for 6-8 minutes, stirring occasionally, until browned and 165°F in the thickest pieces.
04 - Arrange the frozen Texas toast on the prepared sheet pan. Bake until golden and crisp at the edges, adding 1-2 minutes beyond the package time if needed.
05 - Stir the cooked chicken with the warmed Alfredo sauce and Parmesan. The chicken should be coated but not swimming in sauce.
06 - Press a shallow well into each hot toast with the back of a spoon. Divide the chicken Alfredo mixture over the slices, then top with mozzarella and crumbled bacon.
07 - Return the pan to the oven for 4-6 minutes, until the cheese is melted and the toast edges are deeply golden. Sprinkle with parsley and serve hot with extra Alfredo sauce if desired.
