Cherry Cobbler Muffins (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour + 1 tablespoon.
02 - 1/2 teaspoon salt.
03 - 2 teaspoons baking powder.
04 - 2 large eggs.
05 - 1/4 cup salted butter, melted.
06 - 1/2 cup granulated sugar.
07 - 1 teaspoon vanilla extract.
08 - 3/4 cup milk.
09 - 21 ounces cherry pie filling.
10 - 1/4 cup cold butter, cubed.
11 - 1/2 cup flour.
12 - 1 teaspoon baking powder.
13 - 1/4 cup sugar.
14 - 1/4 teaspoon cinnamon.
15 - 1 tablespoon milk.

# Instructions:

01 - Heat oven to 375°F. Line muffin pan with liners.
02 - Sift flour, salt and baking powder.
03 - Whisk eggs, melted butter, sugar, vanilla and milk.
04 - Mix wet into dry ingredients until just combined.
05 - Rinse and drain half the cherries. Toss with flour and fold into batter.
06 - Divide batter in pan. Top with remaining cherry filling.
07 - Mix cold butter, flour, sugar and cinnamon until crumbly. Add milk.
08 - Top with streusel. Bake 22-25 minutes until done.

01 - Serve warm.
02 - Don't overmix batter.
03 - Use cold butter for streusel.
