Cheesy Tater Tot Casserole (Print version)

A hearty baked casserole with seasoned beef, creamy cheddar sauce, vegetables, and a crispy tater tot topping.

# Ingredients:

For the beef filling

01 - 1 1/2 lb (680 g) ground beef
02 - 1 small yellow onion, diced
03 - 2 cloves garlic, minced
04 - 1 tablespoon Worcestershire sauce
05 - 1 teaspoon kosher salt
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon smoked paprika

For the creamy layer

08 - 1 can (10.5 oz / 298 g) condensed cream of mushroom soup
09 - 1/2 cup (120 g) sour cream
10 - 1/3 cup (80 ml) milk
11 - 1 can (14.5 oz / 411 g) cut green beans, drained well
12 - 1 cup (165 g) frozen corn, thawed and drained
13 - 2 cups (225 g) shredded sharp cheddar cheese, divided

For the topping

14 - 1 bag (32 oz / 900 g) frozen tater tots, kept frozen
15 - 2 tablespoons sliced green onions, optional for serving

# Instructions:

01 - Heat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
02 - Cook the ground beef and onion in a large skillet over medium-high heat for 7-9 minutes, breaking the meat into crumbles, until the beef is fully browned. Drain off excess fat.
03 - Stir in the garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Cook for 30-60 seconds, just until fragrant.
04 - In a large bowl, stir together the cream of mushroom soup, sour cream, milk, green beans, corn, 1 cup of cheddar, and the cooked beef mixture.
05 - Spread the filling evenly in the prepared baking dish. Arrange the frozen tater tots in a single layer over the top.
06 - Bake uncovered for 35 minutes, until the filling is bubbling and the tots are starting to brown.
07 - Sprinkle the remaining 1 cup cheddar over the tots. Bake for 8-10 minutes more, until the cheese is melted and the top is golden.
08 - Let the casserole rest for 5-10 minutes before scooping. Sprinkle with green onions if using.

# Good to know:

01 - Keep the tater tots frozen until assembly for the crispiest topping.
02 - Resting the casserole helps the creamy filling set so it scoops cleanly.
03 - Nutrition is an estimate per serving.
