Cheesy Taco Pinwheels (Print version)

Crispy Cheesy Taco Pinwheels filled with seasoned beef, cream cheese, sour cream, and cheddar.

# Ingredients:

For the taco filling

01 - 1/2 lb (225 g) ground beef
02 - 2 tablespoons taco seasoning
03 - 1/4 cup (60 ml) water
04 - 3 oz (85 g) cream cheese, softened
05 - 1 tablespoon sour cream
06 - 1/4 teaspoon kosher salt, or to taste

For rolling and serving

07 - 2 large 10-inch flour tortillas
08 - 1/3 cup (35 g) shredded cheddar cheese
09 - Salsa, guacamole, or sour cream, for serving
10 - Chopped cilantro or green onion, optional

# Instructions:

01 - Cook the ground beef in a skillet over medium heat for 5-6 minutes, breaking it into small crumbles, until no pink remains. Drain excess fat.
02 - Add taco seasoning and water. Simmer for 3-5 minutes, stirring often, until the liquid has cooked off and the beef is thick.
03 - Transfer the warm beef to a bowl. Add softened cream cheese, sour cream, and salt, then mash and stir until the filling is evenly combined.
04 - Divide the filling between the tortillas and spread it almost to the edges. Sprinkle cheddar over the filling.
05 - Roll each tortilla tightly. Trim the ends, then cut each roll into 5 even pinwheels with a serrated knife.
06 - Place the pinwheels cut side down in a single layer in the air fryer basket. Cook at 370°F for 5-6 minutes until hot and lightly crisp.
07 - Serve warm with salsa, guacamole, sour cream, and optional cilantro or green onion.

# Good to know:

01 - Makes 10 pinwheels, about 5 servings as an appetizer.
02 - Use about 1 cup cooked leftover taco meat if you want to skip browning fresh beef.
03 - For a lower-carb version, use low-carb flour tortillas.
