Sauté the onion and garlic in a skillet over medium heat until soft, about 3 minutes. Add the ground beef and taco seasoning and cook until browned, breaking it up as you go. Remove from the heat and let it cool slightly.

Preheat the oven to 425°F (220°C). Roll the pizza dough into a large rectangle about 1/4 inch thick on a lightly floured surface, then cut it into 5 even strips.

Spoon the beef mixture down the center of each strip and top with a generous pinch of cheese. Fold the dough over the filling, then pinch the edges and ends firmly to seal.

Transfer the breadsticks to a parchment-lined baking sheet and brush each one with olive oil. Bake for 10 minutes until the dough just begins to set.

Remove the pan from the oven and sprinkle the remaining cheese over each breadstick. Return to the oven for 5 minutes or until the cheese is bubbly and lightly golden.

Let the breadsticks rest for 3 to 5 minutes. Serve warm with salsa and guacamole on the side.
